How to Enjoy a Snow Day: Part II

Here’s a great little recipe I came across in my Maple Syrup Cookbook by Ken Haedrich:

Maple Roasted Root Vegetables

This is a very simple and easy little recipe, that turned out to be quite delicious!

1) Chop up root veggies into bit-sized chunks (carrots, potatoes, sweet potatoes, parsnips, rutabaga, beets etc.)

2) Melt together:
1/4 cup butter
1/4 cup rum (I used Southern Comfort)
1/2 cup maple syrup

3) Pour sauce over veggies and toss well

4) Put veggies in shallow baking pan(s) so that they form a single layer. Drizzle any remaining sauce over top, and sprinkle with coarse sea salt. Cover with tin foil and back for 25 minutes at 350F.

5) Remove tin foil and bake for another 20-25 minutes, until veggies are soft.

6) I finished them by switching the oven to broil and browning them.

YUM!

Indeed, these were so tasty that I was not the only one looking forward to eating them:

I even caught the cats trying to steal some, and when I gave them a piece, they actually ate it! Trust me, these are a big hit!
